  • 1 tablespoon castor sugar,12.5grams
  • 1/2 teaspoon salt
  • 1  teaspoon cayenne
  • 2-1/2 tablespoon shortening, ½ cup melted
  • 1 cup heavy cream, 232 grams
  • 1 egg
  • ½ teaspoon castor sugar

Method

Sieve all the dry ingredients in a mixing bowl and later shredding the cold shortening into the mixture.

Slowly adding heavy cream, as you begin to mix to form a dough. As the dough begins to form, fold it on itself , giving and maintaining its fluffy flaky texture.

After a few dozen folds, on a lightly floured surface, gently roll and using a biscuit cutter, knife or small cup to shape the biscuits.

Further, with the mixture of egg white and sugar – lightly mix them together and brush on top, before putting them in the oven.

Bake for 200^c for 30mins.

Notes

  • If you are using 00 Flour add 1 tablespoon of baking soda and 1/2 of baking soda to the dry ingredients.
  • It’s a loose dough a few crumbs, here and there, that is perfectly normal, fold and combine. folding the dough on itself helps it form “layers of air” to give it texture.
  • Tim Farmer’s Country kitchen notes as you form your biscuits, pull down the shape and lift but, don’t twist as you form the dough shape as this undoes the “layers of air”
  •  American’s Test Kitchen suggests an egg wash consisting of egg white and sugar, is the best way to gives it that rich golden brown look.
  • Best served with Honey/spread or as a side dish with a protein, soup or stew.
