HOMEMADE MARINARA(ROASTED TOMATO) SAUCE

These vibrant flavors of roasted tomatoes & aromatic herbs are a wonderful symphony of sweet, tangy & tantalizing home culinary exploration for the home cook.

Yield: 4-6 cups

Total cook time :  1 hour 20 minutes  Preparation time : 20  minutes Cook time: 1 hour

Ingredients

  • 7medium tomatoes (570 grams)
  • 5  large green peppers(250 grams)
  • 4 tablespoons neutral Oil
  • 1 tablespoon coarse kosher
  • 1 teaspoon rosemary
  • 1 teaspoon thyme
  • 1 teaspoon oregano
  • 1 teaspoon black pepper
  • 1/2 water cup room temperature

After Roasting

  • 2 tablespoons tomato paste
  • 2 tablespoons soya sauce
  • 1 tablespoon garlic  (2 cloves when minced)
  • 1 tablespoon ginger(1 medium bulb)
  • 1/2 cups olive oil or neutral oil
  • 2 tablespoons neutral oil

Optional

  • 4 tablespoons granulated sugar
  • 1/2 cup finely spring onion chopped (50 grams)
  • 1/2 cup finely spring garlic chopped(24 grams)
  • 1/2 cup finely parsley chopped(30 grams)
  • 1/2 cup finely fresh basil chopped(12 grams)

Method

  • Preheat oven to 190° C or 374° F
  • Cut Tomatoes & Green peppers into quarter sizes, lay spread out on a 33x23x3 cm oven pan and finely chop the other ingredients.
  • Add some oil, fully covering the Tomatoes & Green peppers, further mixing in the spices & salt together, placing in the lightly oiled oven pan
  • Add  1/2 cup of water to prevent sticking and burning at the bottom of the pan.
  • Roast for an hour in the lower shelf of the oven , remove the pan from the oven and let cool.
  • In a large bowl or blender, add the roasted vegetables and slowly add finely chopped ingredients, slowly adding in the tomato paste, soy sauce, water and oil.
  • After thoroughly mixed together, store in a clean jars and water bath or add a bit of little oil to cover the top and refrigerate.

Notes

  • It will keep fresh for 2 weeks in the fridge and a month in the freezer. If you use a water bath, it will last you for a year in a cool dry place.
  • Don’t blend it through for a chucky texture  .
  • You can use it as a dip, a base for a chili or stew and many others dish, check out the Food Network’s dish list ,
  • You can substitute the spice list with an Italian or mixed herb spice blend of your preference that complement the tomatoes.
